3 Ingredient Ice Cream (V+gf)

There isn’t a lot to say about this recipe. The story is simple just like the dish! I really just wanted something sweet, but not too unhealthy and refreshing . I had just bought a bunch of frozen fruit and several cans of full fat coconut milk for another recipe. The idea just came to me and I started blending up.

This recipe can be altered in sooo many ways. Just 1 can of coconut milk and add in anything else you want! Strawberries, Pineapple chunks, bananas and peanut butter, coco powder could also be added to make it a chocolate base.

The sweetener can also be substituted for any other you have on hand. Coconut sugar, honey, maple syrup, agave, really anything will work. Or you can totally turn this into a 2 ingredient recipe and omit the sugar all together, although I will say, a little extra sweetness makes this just perfect.

In my opinion this ice cream is best fresh! When it freezes, it gets really hard, however, just 20 mins on the counter to defrost will do the trick 🙂

Super easy, no churn, vegan and gluten free ice cream.

  • blender or food processor


  • 1 Can Full fat coconut milk
  • 2 Cups Frozen fruit of your choice
  • 2-3 Tbls Organic can sugar Or any sweeter of your choice


  • Just pour everything in blender and BLEND UP.
    Occasionally stir it up.
    Scoop out and enjoy immediately!
