Brownies are probably one of my favorite desserts…actually they tie with chocolate chip cookies for me. I mean they are chocolatey, warm, gooey and crispy all at the same time. However, for some reason I was always so intimidated to make them from scratch. I would always just buy a box mix and veganize it. Now, don’t get me wrong, boxed brownies are still amazing, but I quickly realized that the ingredients in them were typically what I always had on hand, with the exception of cocoa powder. So I finally decided to do it, and let me tell you, THEY ARE SO EASY AND SO INCREDIBLE. I’m honestly mad I waited so long.
This recipe is seriously so easy (10 min prep) and is made with a FLAX EGG. I was beyond impressed with the texture and chewiness these brownies yielded with the use of a flax egg! Sometimes using a flax egg in recipes is hit or miss for me so I was a little hesitant but after the first bite I was shocked. AND the tops and edges were SO crispy ( literally the prefect brownie.)
There really isn’t much more I can say other than DO NOT sleep on making these.
The BEST vegan brownies
Equipment
- 8X8 pan
Ingredients
Wet ingredients
- 3 Tbs ground flax seed
- 1/2 C water
- 1/2 C melted vegan butter
- 1/2 C brown sugar
- 3/4 C cane sugar
- 1 Tbs vanilla
Dry ingredients
- 1 C AP flour a 1:1 gluten free flour can be substituted
- 2/3 C cocoa powder
- 1 tsp baking powder
- pinch salt about 1/4 tsp
- 1/2 C chocolate chunks I love the Enjoylife brand
Instructions
Pre-heat oven to 350°
Step 1: wet ingredients
- First mix the ground flax seeds with the water and let stand 5 mins to thicken
- melt butter and add to flax mixture and mix well
- add in vanilla and sugars, combine until all ingredients are incorporated
Step 2: dry ingredients
- in separate bowl combine all dry ingredients
- add the wet to dry and mix until there are no bits of dry flour
- add in chocolate chips
- batter will seem thicker than normal, this is OK
- pour into parchments lined 8X8 pan and bake at 350° for 24-26 mins
